There are plenty of good place to go parasailing near Lucca. especially in the Garfagnana mountains, North of the city. One of the easiest to get to is to start from above Cune, and land in Diecimo. The landing spot is easy to find, off of the road to Abetone, in Diecimo. If the weather is nice, you should see the sails above you. The Google picture of the area should help you find it, as well a this map.
